Macaroni and Cheese

1 lb. Cheddar Cheese grated
8oz. Elbow Macaroni
1 cup Half and Half
3 Eggs beaten
1 Onion diced
1 Tbls. Dijon Mustard
1 Tbls. Worcestershire Sauce
1 tsp. Salt
1 tsp. Black Pepper

Boil Macaroni with onion, salt & black pepper for 15 minutes.
Drain, add all other ingredients and stir with a fork.
Pour into greased casserole dish and bake @ 350 degrees for 1/2 hour.
Then push one whole Scotch Bonnet pepper in center and bake for another 15 minutes.

This dish is delicious hot or cold.

Half and half

This recipe comes from a Jamaican friend living in Florida. Half and half is half milk half cream, available in any supermarket in North America, and is commonly used in coffee.

I use evaporated milk instead and I find that if I omit the eggs completely the the finished texture is a bit more moist. Best to experiment until you find what you like best.

I used Walkerswood One Stop Savoury sauce, which is my favourite sauce, instead of Worcester sauce.
